This research study was conducted to extract and characterize avocado seed oil using the Soxhlet oil extraction method. The data was statistically analyzed using Tukey HSD (Tukey Honest Significance Difference). The results for the physical properties at five (5) levels of moisture content (48, 43, 38, 33, 28%), relative (0.900, 0.910, 0.914, 0.919, 0.930) respectively. Kinematic viscosity (35.0, 35.4, 35.8, 36.1, and 36.5) respectively. Refractive index (1.46, 1.46, 1.46, 1.46 and 1.46) respectively. Flashpoint (98, 97, 94, 93 and 91) respectively. Cloud points were 8, 9, 10, 11, and 12 at Five (5) levels. Also, for the chemical properties, the results were: Low FFA content (0.39, 0.36, 0.33, 0.31, 0.29 mg KOH/g respectively). Low acid value was of (0.85, 0.82, 0.78, 0.75, 0.71% respectively) was obtained. A high saponification value of 222, 220, 217, 213 and 211 were obtained. The iodine value of the seed oil was (38.0, 37.7, 37.5, 37.4 and 37.0 mg Iodine/ g respectively). The peroxide value was (2.88, 2.85, 2.77, 2.74 and 2.71 meq/100 of oil, respectively).
