Abstract
The study on the management of food waste in the production area in hospitality is of importance in the hospitality industry. The research using Crest Hotel, Jos, checked the activities of this food waste in the production area. Literatures were reviewed data collected revealed that food waste cannot be overcome, only avoided to a minimal bearing. Findings revealed that there should be proper portion control, and food items of low demand should be purchased in small quantities. Recommendation is made to curtail food wastage in the industry such as there should be constant light supply, proper storage facilities and proper portion control system.
