Abstract
Bambara groundnut (Vigna subterranea) is a nutritionally rich but underutilized legume widely cultivated in Africa due to its adaptability to poor soils and drought conditions. Its seeds are an important source of protein, making it a valuable crop for combating malnutrition. During germination, storage proteins are degraded into simpler nitrogenous compounds that support early seedling development. This study was designed to estimate changes in protein and ethanol-soluble nitrogen during the germination of Bambara groundnut seedlings over a seven-day period. Standard biochemical techniques were employed to quantify total protein content and ethanol-soluble nitrogen fractions at daily intervals. The results showed a steady decline in total protein concentration, reflecting the mobilization of seed storage proteins to meet the metabolic and structural needs of the developing seedlings. In contrast, ethanol-soluble nitrogen, which comprises low-molecular-weight compounds such as peptides and amino acids, increased progressively as germination advanced, with the most significant rise observed from day three onwards. These findings indicate active proteolysis and accumulation of soluble nitrogenous metabolites necessary for enzymatic activity, tissue differentiation, and energy metabolism. The study underscores the dynamic nature of nitrogen metabolism in germinating Bambara groundnut and provides useful insights into its nutritional and functional potential.
