Abstract
A comprehensive comparative analysis was conducted to evaluate the proximate composition and phytochemical profile of green and red apple varieties (Malus domestica). The study revealed significant varietal differences in both nutritional and bioactive components. The red apple demonstrated superior protein (12.37%) and fat (15.17%) content, while the green variety showed higher carbohydrate (47.05%) and crude fibre (20.50%) levels. Phytochemical screening identified distinct bioactive patterns: the green variety exhibited strong positive results for tannins (++) and phenols (++), whereas the red variety tested positive for saponins, a compound absent in the green apple. Both varieties tested positive for alkaloids and flavonoids. The results demonstrate fundamental metabolic specialization between varieties: the red apple represents a nutritionally-dense profile with balanced phytochemical characteristics, while the green variety exemplifies a digestive-health specialized strategy prioritizing fibre and potent astringent compounds. Strong correlations were observed between proximate and phytochemical parameters, particularly between high fibre content and tannin concentration, and between high protein and saponin presence in the red variety. These findings provide a scientific basis for cultivar-specific applications in functional food development, nutritional supplementation, and dietary recommendations.
